It is common knowledge that people who live around the Mediterranean region tend to live longer and have less overweight related diseases than people in the developed countries except perhaps, Japan.

Not very long ago, the Mediterranean climate was thought to be the reason why people live longer and are healthier in the region. Many food sources that are part of a Mediterranean diet are high in anti-oxidants. Anti-oxidants are important compounds found in certain types of food that mopped up dangerous free radicals. Free radicals are produced when the body burns oxygen to produce energy.

The accumulation of these free radicals in the body accelerates the ageing process. Cellular tissues such as skin and muscles wear out and lose their elasticity. Hey :D my fam is also on the mediterranean diet too! lol. Heres 3 of em that we have tryed already!!

HOMEADE PIZZA!
For the dough
1 heaped cup flour
1 level teaspoon dry yeast
1/2 teaspoon salt
1/2 cup extra virgin olive oil

For the homemade pizza toppings
2 large red bell peppers
2 medium-sized eggplants
2 medium size onions
2 small ripe tomatoes
Extra virgin olive oil
2 herrings or raw sausage

Directions:
1 Place the flour in a large bowl. Add the dry yeast and the salt, and mix well.

2 In a large cup, mix the 1/2 cup of olive oil and the 1/2 cup of lukewarm water.

3 Make a small well in the middle of the flour and add the olive oil and water mixture.

4 Knead the flour mixture by hand for 10 minutes until the dough is elastic and smooth, and until the olive oil gives it a nice golden color.

5 Place the dough in the same bowl, cover with a towel, and allow it to rise for 3 hours in a warm place with no draught.

6 Preheat the oven to 200ºC, and roast the whole vegetables.

7 When the vegetables are well roasted, peel them.

8 Cut the peppers, and eggplants into long strips, and the onion into rings or strips. Finely chop the tomatoes.

9 When the dough has risen for 3 hours, stretch it with a rolling pin. Give it an oval form like shown in the picture.

10 Oil a cookie sheet, adn sprinkle some flour on it. Place the oval shaped flour on it.

11 First spread the onion over the whole homemade pizza dough. Second, distribute the tomato. Third, distribute the pepper strips like shown in the photo. Fourth, place the aggplant strips in between the pepper strips. Finally, place the herrings or the sausage.

12 Drizzle olive oil liberally over the whole homemade pizza toppings. Use a cruet or olive oil dispenser if you have one.

13 Bake the delicious homemade pizza for 30 minutes. Here you have it, a delicious Catalan coca

Heres A DESSERT RECIPE!! Its CHEESE CAKE!! But, MEDITEEANEAN CHEESCAKE! Lol.

INGREDIENTS! FOR DOUGH!
1 1/3 cups (300 g) flour – use cake flour if possible
½ cup (12 cl) olive oil
½ cup (12 cl) water
¼ cup anisette or other anise-flavored liqueur
1/4 of a lemon peel – grated
1/4 teaspoon ground cinnamon
1/4 teaspoon anise seeds
A dash of Catalan mistela or other sweet dessert wine

For the filling

1 pound (500 g) fresh ricotta or ricotta-like cheese
1 1/3 cups (300 g) sugar
4 eggs
20 leaves fresh mint – minced. Or ½ teaspoon powdered dry mint
1/4 of a lemon peel – grated
A few whole mint leaves as garnish
Some powdered sugar – optional

The pastry
Grate the lemon peel and mix it with the ground cinnamon.

Combine the olive oil, water, anisette and optional sweet dessert wine in a large bowl and lightly beat it with a fork or whisk. Add the cinnamom and grated lemon peel and mix. Add the anise seeds and mix together.

Add the flour and knead it with your hands. The final dough shouldn’t be dry. Cover it with a cloth and let it rest for 2 hours in a cool room.

The filling – When the pastry has rested for about one and a half hours, it’s time to continue with the preparation of this cheesecake recipe.

In a bowl, beat the eggs with a whisk or fork. Add the sugar and mix together. Add the fresh ricotta or other fresh cheese and mix together well.

Add the minced mint leaves and the grated lemon peel and mix together.

Roll the dough out with a rolling pin and put it on a round tart pan with fluted sides. The pie pan should be about 1 inch (3 cm) deep and 9 to 10 inches (24 cm) wide. The dough should cover the bottom and the sides. Press the crust against the fluted sides with your fingers.

Pour the ricotta cheese filling into the crust and bake at 360 °F (180 °C) for 40 to 45 minutes. Allow to cool to room temperature.

This step of the cheesecake recipe is optional, but you can cover it with confectioner’s sugar, and garnish it with mint leaves. Serve with a glass of sweet dessert wine.
